2 small garlic cloves, minced
1 teaspoon anchovy paste
2 tablespoons freshly squeezed lemon juice, from one lemon
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 cup mayo
½ cup freshly grated Parmigiano-Reggiano
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
Optional but I like to squeeze some lemon 🍋 on there too !

Double baked sweet potatoes topped with sunny side up eggs 🍳 garnished with fresh rosemary and green onion 🌿 Perfect way to start the day!

HOW TO MAKE
•Preheat the oven to 425℉
•Cut sweet potatoes in half , drizzle with oil and place on pan
•Cook until you can poke through easily with a fork
•Next, carefully scrap out the insides into a bowl! Try not to tear the shell
•Add olive oil, chopped green onion, & salt and pepper to taste. Mash the mixture together
•Fill the potato shells with the filling. Then crack an egg on top and pop back in the oven. Depending on how you like your eggs 🍳 time will vary
•remove from oven , garnish and enjoy !

I am currently obsessed with @fireandsmokesociety bird rub “Chica Licka Bam Bam”. I originally bought it because I thought the name was fun and so happy I did because it tastes amazing 😋 ( not sponsored) !! I paired this chicken with some homemade mashed sweet potatoes. Mixed with minced garlic, butter & cream. Lastly, some sour cream on the side ( goes great with the chicken).

I try to eat greens as much as I can but sometimes a classic meat and potato is the way to go! 😋

•Creamy Chickpea Spaghettini• topped with parmesan crisps

This pasta is so creamy and delicious 🤤 I made this recipe up as I went along and it has officially been added to my cookbook 📙

How I made it:

Start by heating olive oil in a pan on high heat. Next, add a handful of chopped cauliflower and fry until golden brown. Next, add in a can of rinsed chickpeas and a chopped onion. Once the onions are turning colour, add in about two cups of spinach. Now, add heavy cream (1/2 cup) and a large hand full of freshly grated Parmesan. To spice I used a stem of fresh Rosemary, garlic powder, Italian seasoning, salt, pepper! Add your Al dente spaghettini and let simmer for 5 minutes on low heat. Such a perfect lunch on a winter day 🍝

RECIPE ⬇️

1 cup unsalted butter, cold
1 cup dark brown sugar, packed
1 cup granulated sugar
2 large eggs, room temperature
1 and ½ teaspoon pure vanilla extract
2 and ½ cups all purpose flour
2 teaspoon cornstarch
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
1 cup milk chocolate chips
1 cup sweetened dried cranberries + more for topping
¾ cup toasted walnuts, chopped

I used beyond meat ground beef as my meat substitute cooked with onions, peppers and a homemade taco seasoning recipe listed below !

Taco seasoning recipe ↓
1 tablespoon chili powder  ¼ teaspoon garlic powder  ¼ teaspoon onion powder  ¼ teaspoon crushed red pepper flakes  ¼ teaspoon dried oregano  ½ teaspoon paprika  1 ½ teaspoons ground cumin  1 teaspoon sea salt  1 teaspoon black pepper

Since I have removed beef from my diet , I have been experimenting with different recipes! This one will definitely be added to the recipe book 📚 😋

My decoration skills aren’t perfect 🙈 but it’s so fun ! Also getting a gingerbread house to stick together is not the easiest task in the world 🤦🏼‍♀️😅

TIP* I found using parchment paper under the roof helped keep it together 💁‍♀️

BERRY CRUMBLE 🫐🍒🥧

For the filling I used a bag of frozen organic 🍒 cherries , 🫐 blueberries & raspberries mixed with some sugar and juice from a lemon! 🍋

For the crust you mix a 3/4 cup of rolled oats with 1 cup of all purpose flour & 1/2 cup of melted butter & 1/2 cup brown sugar!

Bake for 45 minutes at 350 °F ! Enjoy warm with some ice cream or all alone! So delicious 🤤
