How to make 2 ingredient pancakes

These 2 ingredient pancakes are so easy to make! Two eggs for one banana. They are gluten-free and dairy-free. I was hesitant to try these at first because I was scared I would end up with banana-flavoured scrambled eggs. Luckily they turned out amazing! They do resemble a pancake (looks wise). I will mention that they are not exactly a replacement for fluffy pancakes but they are more of their own thing. They taste a little more like a thick crepe as opposed to a pancake. However, you top them with your favourite toppings and they taste phenomenal. 10/10 recommend trying!

2 Ingredient Banana Pancakes

Prep Time 5 mins
Cook Time 3 mins

  • ripe banana
  • 2 large eggs lightly beaten

  • Begin by mashing the banana in a mixing bowl. Continue mashing until the banana has a pudding-like consistency and minimal lumps remain (a few small lumps are okay ).
  • Next, stir in your eggs until completely combined
  • Heat a pan over medium heat. Melt a little butter or warm a little vegetable oil in the pan if desired to prevent sticking!
  • Drop about 2 tablespoons of batter into the pan. It should sizzle immediately — if not, turn up the heat slightly. Repeat with dropping more batter into the pan, leaving at least an inch or two between pancakes.
  • Cook the pancakes until the bottoms look browned and golden when you lift a corner. This takes about 1 minute. Flip and repeat!
  • Finally, top with your favourite syrup and freshly chopped bananas. Enjoy!
